French Onion Soup






I chose French Onion Soup as my recipe because it is one of my favorite soups and I don't get a lot of opportunities to make it. I read the story to go along with the recipe and it was a caption from Les Miserables. This caption was very short and had to do with the character Madam Magloire serving dinner for the Bishop. She was making a soup with bread, bacon, mutton, figs and cheese. Although this doesn't seem like French Onion Soup, it sounds pretty delicious. I remember when I was in 7th grade going to see the play Les Miserables and practically bawling at the end. It was a play full of passion and hope and all of these poor, desperate people that only had a few things to live for. It was amazing... I think it is off broadway now though.


Making the soup was pretty fun. I got my culinary boyfriend, Mike to help my through the process. First I went to stop & shop and got my ingredients and scaled them out. First we borrowed a pot from one of our kind culinary friends and added the onions and the butter. Then I mixed these onions over heat until they were golden brown.

Next we add in our broth, wine, salt and pepper into the pot and let it simmer for 30 minutes. Our mouths are watering at this point because the kitchen smells like caramelized onion heaven. While the soup is simmering I toasted the bread which I had to do twice because on the first shot I forgot about the bread in the toaster and it sort of caught on fire.

Once the soup is simmered and the bread is toasted, all that is left is the assembly of the soup. I poured the soup into the bowl, placed the bread in and topped that with two slices of Swiss Cheese. Let the cheese melt a couple minutes before you eat the soup.

The soup overall was pretty dang good.
